Church Block Red Blend
Wine
Wirra Wirra Church Block Red Blend is the first wine Greg Trott produced under the Wirra Wirra label in 1972. Today it is a blend of Cabernet Sauvignon, Shiraz and Merlot.
The fruit is gently crushed and destemmed. During fermentation the juice is pumped over the grape skins 2-4 times daily, extracting flavour and colour as well as regulating the ferment's temperature.
Towards the end of the process, the number of pump overs is reduced. The wine is then drained, the remaining skins are pressed and malolactic fermentation is completed in either tank or barrel.
The wine ages in oak specifically chosen for each parcel, mainly seasoned French barriques and hogsheads. Small amounts of new oak and American oak are used.
Deep plum purple, Wirra Wirra Church Block Red Blend is full bodied with ripe black fruit flavours, fine tannins and a long, balanced finish. Cellaring potential is 10 years.
